If you live with me or follow me on Instagram you must already know that lately i developed a slight lavender obsession. I've got a huge lavender bush blossoming in my garden and i'm trying to get as much use out of it as possible. I've baked a lemon lavender pie, made little lavender bags to put in the closet and my latest attment was lavender syrup. It is really easy to make and now i use it to make cocktails (it's super yummy mixed with gin and champagne) or lemonade.
To make about half a liter of syrup you'll need: 500ml of water, 500ml of sugar and a handful of lavender buds. First, you combine water and sugar in a saucepan, add buds and cook on low heat until sugar dissolves. Then you bring it to a boil and cook for another 2-3 minutes, just until it starts to thicken. After that you just need to cool it off, strain out the lavender pieces and refrigerate.
To make the lemonade you just slice up a whole lemon (i like to cut the peel off since it's full of toxins), put it in a jar, add 10% lavender syrup and 90%water, stir and refrigerate. To make it super fresh i added some ginger to the mix and now my guests can't seem to get enough off it.
